This recipe is an easy meal prep idea for lunch or dinner. You can prepare these healthy bowls and eat during week with no fuss!
Ingredients:
Assorted vegetables (such as bell peppers, zucchini, carrots, and broccoli)
Cooked quinoa
Olive oil
Salt & pepper
and your choice of spice.
Instructions:
Toss the vegetables, olive oil, salt, pepper and spices.
Roast them in the oven until tender and slightly caramelized.
Serve over a bed of cooked quinoa for nutritious and satisfying meal.
