This recipe is an easy meal prep idea for lunch or dinner. You can prepare these healthy bowls and eat during week with no fuss!


Ingredients:

  • Assorted vegetables (such as bell peppers, zucchini, carrots, and broccoli)

  • Cooked quinoa

  • Olive oil

  • Salt & pepper

  • and your choice of spice.


Instructions:

  • Toss the vegetables, olive oil, salt, pepper and spices.

  • Roast them in the oven until tender and slightly caramelized.

  • Serve over a bed of cooked quinoa for nutritious and satisfying meal.
